Recipe: My Greek Salad

A Greek salad is a staple to my meals.

Confession: I don’t really make any other type of salad! 

This salad really lets the ingredients shine. Ripe tomatoes, aged balsamic vinegar, feta… so good. 

While its authentically Greek without lettuce, it tastes great if you’re in the mood to toss some in.

Ingredients

  • 1 medium tomatoes, cubed (I prefer Roma tomatoes, beef, heirloom)
  • ½ cucumber, sliced
  • ½ red pepper, sliced (raw)
  • Lettuce (optional)
  • ¼ cup feta cheese
  • 1 tablespoon olive oil
  • Drizzle balsamic vinegar
  • Salt
  • Freshly ground pepper
  • 1 pinch dried oregano

Instructions

  1. Combine cubed tomatoes, sliced cucumber, and sliced red pepper in a bowl.
  2. Sprinkle feta cheese.
  3. Season with salt, pepper, oregano to taste.
  4. Drizzle with olive oil and balsamic vinegar.
  5. Toss, and serve!
