Recipe: Baked Feta with Broccoli, Tomatoes, Onion

Ingredients

  • 2 large heads of broccoli, trimmed and cut into bite-sized pieces
  • 2 cups cherry tomatoes, halved
  • ½ red onion, cut in half, then sliced into 1-inch wedges
  • ¼ cup kalamata olives, pitted
  • 1 lemon, cut in half: one half cut into thin rounds, the other half saves for serving
  • 3 tablespoons olive oil
  • 1 tablespoon ground cumin
  • ½ teaspoon red pepper flakes
  • Salt
  • Freshly ground pepper
  • 6-oz block feta cheese, cut into 1” slices
  • ¼ cup fresh basil (or parsley) – optional for garnish
  • Cooked orzo, for serving.

Instructions

  1. Heat oven to 400 degrees, set rack on lower third of oven.
  2. On a foiled baking sheet, combine broccoli, tomato, onion, olives, and lemon. Toss with olive oil.
  3. Add cumin, red pepper flakes, salt, pepper. Toss until evenly coated. Arrange evenly on pan.
  4. Nestle feta slices in between veggies.
  5. Roast for 20 min, until broccoli is charred on tips, tomato skins are blistered.
  6. Serve over orzo. Drizzle with olive oil, squeeze lemon, top with herbs.
